Instructions
- Preheat the oven to 400°F and line a sheet pan with foil, coating it with cooking spray.
- Arrange the carrots in a single layer on the baking pan.
- In a small bowl, mix the olive oil, honey, salt, and pepper.
- Pour the honey mixture over the carrots and toss to coat.
- Bake in the oven for 25-35 minutes or until the carrots are tender and browned.
- Remove from the oven and serve immediately, garnished with parsley if desired.
