Instructions
- Preheat the oven to 425°F.
- Peel and trim the carrots, slicing them into 2-inch chunks.
- Transfer the carrots to a baking sheet and toss with olive oil and salt.
- Arrange the carrots in a single layer on the baking sheet.
- Bake for 30 to 35 minutes, shaking the tray halfway through until tender.
- In a microwave-safe bowl, combine honey and butter, microwaving until bubbling.
- Add balsamic vinegar if desired, and stir until combined.
- Pour the honey mixture over the hot carrots and toss to coat.
