Ingredients

The carrots

  • 2 pounds carrots

The sauce

  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 2 tablespoons honey
  • 1 tablespoon salted butter
  • 1 teaspoon balsamic vinegar (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Peel and trim the carrots, slicing them into 2-inch chunks.
  3. Transfer the carrots to a baking sheet and toss with olive oil and salt.
  4. Arrange the carrots in a single layer on the baking sheet.
  5. Bake for 30 to 35 minutes, shaking the tray halfway through until tender.
  6. In a microwave-safe bowl, combine honey and butter, microwaving until bubbling.
  7. Add balsamic vinegar if desired, and stir until combined.
  8. Pour the honey mixture over the hot carrots and toss to coat.
