Oven Roasted Honey Carrots

Instructions
- Preheat the oven to 425ºF and line a baking sheet with parchment paper.
- In a large bowl, combine the carrots, olive oil, honey, garlic, parsley, salt, and pepper. Toss to coat the carrots.
- Spread the coated carrots onto the baking sheet.
- Bake for 30 minutes, stirring every 10 minutes.
- Add 1 tbsp of honey and 1 tbsp of olive oil to the pan, toss, and bake for another 8-10 minutes.
- Top with fresh parsley and serve.
