Ingredients

The carrots

  • 1 lb carrots, tops trimmed and skin peeled

The seasoning

  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • to taste salt
  • to taste freshly cracked black pepper
  • 2 teaspoons parsley leaves, finely chopped
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. In a large bowl, toss the carrots with melted butter, garlic, a large pinch of salt, black pepper, parsley, and honey.
  3. Transfer the carrots to a baking sheet lined with parchment paper.
  4. Spread the carrots out in a single layer and roast for about 25-30 minutes, or until fork-tender and lightly browned.
