Ingredients

  • 360 grams water
  • 12 grams salt
  • 100 grams active sourdough starter
  • 450 grams bread flour

Instructions

  1. Mix the water, salt, and sourdough starter in a bowl, then add the flour to form a sticky dough.
  2. Cover the bowl and let the dough rest for 30 minutes.
  3. Perform a series of stretches and folds for a total of 4 times at 30-minute intervals over 2 hours.
  4. Transfer the dough to a straight-sided vessel and let it rise until it increases in volume by about 75%.
  5. Cover the vessel and refrigerate for 12 to 24 hours.
  6. Remove the dough from the fridge, dust with flour, and turn it out onto a floured surface.
  7. Pat the dough into a rectangle and cut it into 8 equal pieces.
  8. Transfer the pieces to a parchment-lined sheet pan and let them rest for 1 hour.
  9. Preheat the oven to 475°F and bake the rolls for 10 minutes, then lower the temperature to 450°F and bake for another 10 minutes.
  10. Cool the rolls on a rack for at least 20 minutes before slicing.
