Instructions
- Mix the water, salt, and sourdough starter in a bowl, then add the flour to form a sticky dough.
- Cover the bowl and let the dough rest for 30 minutes.
- Perform a series of stretches and folds for a total of 4 times at 30-minute intervals over 2 hours.
- Transfer the dough to a straight-sided vessel and let it rise until it increases in volume by about 75%.
- Cover the vessel and refrigerate for 12 to 24 hours.
- Remove the dough from the fridge, dust with flour, and turn it out onto a floured surface.
- Pat the dough into a rectangle and cut it into 8 equal pieces.
- Transfer the pieces to a parchment-lined sheet pan and let them rest for 1 hour.
- Preheat the oven to 475°F and bake the rolls for 10 minutes, then lower the temperature to 450°F and bake for another 10 minutes.
- Cool the rolls on a rack for at least 20 minutes before slicing.
