Ingredients

The dough

  • 100 g active starter
  • 10 g kosher salt
  • 430 g water
  • 512 g bread flour

For greasing

  • a few tablespoons extra-virgin olive oil
  • room temperature none butter

Instructions

  1. Mix the starter, salt, and water in a bowl and stir to combine.
  2. Add the flour and mix until incorporated, then let it rest for 30 minutes.
  3. Perform a series of folds every 30 minutes for the first two hours.
  4. Let the dough rise at room temperature for 4 to 18 hours until it nearly doubles in size.
  5. Grease a loaf pan with butter and transfer the dough into it.
  6. Let the dough rise until it crowns the rim of the pan, about 5 to 6 hours.
  7. Preheat the oven to 425ºF and bake for 20 minutes.
  8. Reduce the heat to 375ºF and bake for an additional 20 to 25 minutes until golden.
