Ingredients

  • 2 ½ cups all-purpose flour

  • 2 tablespoons olive oil
  • 2 teaspoons salt

Instructions

  1. Combine flour, water, sourdough starter, olive oil, and salt in a large bowl and mix until a dough forms.
  2. Knead the dough a few times until it forms a soft ball, avoiding adding extra flour.
  3. Cover the bowl and let the dough rise in a warm spot until doubled, which may take 2 to 6 hours.
  4. Dust a parchment-lined baking sheet with flour and set aside.
  5. Divide the dough into ten equal pieces and shape each into a ball, letting them rest for 30 minutes.
  6. On a lightly floured surface, roll each piece into a thin circle, about 6 to 7 inches in diameter.
  7. Cook the flatbreads in a hot skillet or griddle for 1 to 2 minutes on each side until golden and cooked through, ensuring not to pierce any bubbles.
  8. Serve warm or at room temperature, and store in a sealed bag.
