Ingredients

  • 400 g bread flour
  • 100 g active sourdough starter
  • 300 g water
  • 8-10 g kosher salt or sea salt
  • as needed g rice flour (for dusting)

Instructions

  1. Step 1: Mix water, starter, and salt in a bowl, then add flour to form a sticky dough.
  2. Step 2: Cover the dough and let it rest for 30 minutes.
  3. Step 3: Perform a series of stretch and folds on the dough for 2 hours, repeating every 30 minutes.
  4. Step 4: Allow the dough to rise until it nearly doubles in volume, covering it during this time.
  5. Step 5: Shape the dough and let it rest for 30-40 minutes.
  6. Step 6: Place the dough in a floured bowl and cover, then refrigerate for 12-24 hours.
  7. Step 7: Preheat the oven to 500ºF and prepare for baking.
  8. Step 8: Transfer the dough to parchment, score it, and place it in a Dutch oven.
  9. Step 9: Bake covered for 30 minutes, then uncover and bake for an additional 10 minutes at 400ºF.
  10. Step 10: Let the loaf cool for at least 30 minutes before slicing.
