Soft Whole Wheat Bread

Instructions
- Mix together 3 cups of whole wheat flour, ¼ cup whey or other acid, and 2 cups of water in a large bowl and let sit overnight.
- In the morning, stir yeast, 1 tablespoon of honey, and warm water, letting it bubble for 20 to 30 minutes.
- Combine the soaked flour mixture with the yeast mixture, 3 tablespoons melted butter or coconut oil, ¼ cup honey, 2 eggs, salt, and 3 additional cups of flour in a stand mixer.
- Knead the dough for 10 to 15 minutes, adding more flour if sticky.
- Transfer the dough to a greased bowl, cover, and let rise for about 2 hours until doubled in size.
- Knead the dough for 2 minutes, divide into two balls, and roll each into a loaf shape.
- Place the loaves in greased pans, cover, and let rise again for about 2 hours.
- Score the loaves and bake at 350°F for about 40 minutes, checking for an internal temperature of 190 to 200°F.
- Let the loaves cool for at least 10 minutes before removing from pans and brush with melted butter.
