Small Batch Soft and Fluffy Whole Wheat Bread

Instructions
- Mix 3 cups of whole wheat flour, yeast, and vital wheat gluten in a stand mixer bowl.
- Add warm water and mix well, then cover and let it rest for 10-12 minutes.
- Add lemon juice, oil, honey, and salt, then mix on low speed.
- Gradually add flour until the dough pulls away from the sides of the bowl.
- Knead the dough for 5-6 minutes until soft and smooth.
- Divide the dough in half and shape each piece into a loaf.
- Place the loaves in greased loaf pans and let them rise until 1-2 inches above the edge of the pan.
- Preheat the oven to 350°F and bake for 28-32 minutes until golden.
- Turn the bread onto a wire rack and brush with butter if desired.
