Ingredients

  • 6 ½ cups whole wheat flour
  • 1 tablespoon vital wheat gluten
  • 2 packets yeast
  • 2 ½ cups warm water
  • cup canola oil
  • cup honey
  • 1 ½ tablespoons lemon juice
  • 1 tablespoon salt

Instructions

  1. Combine 3 cups of whole wheat flour, vital wheat gluten, and yeast in a mixing bowl.
  2. Add warm water and stir until combined, then let sit for 10 minutes.
  3. In a separate bowl, mix canola oil, honey, lemon juice, and salt, then add to the flour mixture.
  4. Mix until combined, then gradually add the remaining flour and knead the dough for 10 minutes.
  5. Divide the dough into two equal portions and shape into loaves.
  6. Place the loaves in greased loaf pans and cover with a towel to rise for 30 minutes.
  7. Preheat the oven to 350°F, then bake the loaves for 30 minutes until golden brown.
  8. Allow the bread to cool before slicing.
