Honey Whole Wheat Rolls

Instructions
- Combine warm water, yeast, and sugar in a bowl and let it rest for 5 minutes.
- Soak the eggs in warm water for 5 minutes to bring them to room temperature.
- Add butter, honey, eggs, salt, and milk to the yeast mixture and blend.
- Incorporate lemon juice, vital wheat gluten, and 2 cups of wheat flour, then blend.
- Switch to a dough hook and add the remaining 2 cups of wheat flour, kneading on low speed for 4 minutes, adding more flour as needed.
- Cover the bowl and let the dough rest for 1 hour.
- Punch down the dough and divide it into 15 equal portions.
- Butter a baking dish and place the rolls inside, covering with plastic wrap.
- Let the rolls rise until doubled in volume, about 1 hour.
- Preheat the oven to 375°F during the last 20 minutes of rising.
- Bake the rolls for 12-15 minutes until golden brown and cooked through.
- Brush the tops with butter and serve warm.
