Ingredients

  • ½ cup warm water
  • Tbsp active dry yeast
  • 1 tsp granulated sugar
  • cup unsalted butter, softened
  • cup honey
  • 2 large eggs
  • tsp salt
  • ¾ cup milk, warmed
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp vital wheat gluten
  • 4 cups white whole wheat flour

Instructions

  1. Combine warm water, yeast, and sugar in a bowl and let it rest for 5 minutes.
  2. Soak the eggs in warm water for 5 minutes to bring them to room temperature.
  3. Add butter, honey, eggs, salt, and milk to the yeast mixture and blend.
  4. Incorporate lemon juice, vital wheat gluten, and 2 cups of wheat flour, then blend.
  5. Switch to a dough hook and add the remaining 2 cups of wheat flour, kneading on low speed for 4 minutes, adding more flour as needed.
  6. Cover the bowl and let the dough rest for 1 hour.
  7. Punch down the dough and divide it into 15 equal portions.
  8. Butter a baking dish and place the rolls inside, covering with plastic wrap.
  9. Let the rolls rise until doubled in volume, about 1 hour.
  10. Preheat the oven to 375°F during the last 20 minutes of rising.
  11. Bake the rolls for 12-15 minutes until golden brown and cooked through.
  12. Brush the tops with butter and serve warm.
