Ingredients

The dough

  • cups warm water
  • ¾ Tbsp fast-acting yeast
  • 2 Tbsp maple syrup, agave, or honey
  • ½ Tbsp salt
  • 1 Tbsp flaxseed meal
  • 2 cups whole-wheat pastry flour
  • cups unbleached all-purpose flour

The toppings

  • 2 Tbsp sunflower seeds
  • 2 Tbsp rolled oats

Instructions

  1. Combine warm water, yeast, sweetener, salt, flaxseed meal, and flours in a large bowl and stir until a sticky dough forms.
  2. Knead the dough until it is elastic, adding flour as necessary until it no longer sticks to the sides.
  3. Lightly grease the bowl and let the dough rise for 2 hours at room temperature and then 2 hours in the fridge.
  4. Add sunflower seeds and oats to the dough, knead to incorporate, and shape into a loaf.
  5. Place the shaped dough in a greased loaf pan and let it rest for 45-60 minutes.
  6. Preheat the oven to 425°F and prepare a pan for steam.
  7. Slash the top of the dough and bake for 26-35 minutes until golden brown.
  8. Let the bread cool in the pan for 5 minutes before transferring to a cooling rack.
