Ingredients

The dough

  • 3 tablespoons unsalted butter
  • cups milk
  • ¼ cup honey
  • 1 packet instant yeast
  • cup old fashioned oatmeal (optional)
  • cups all-purpose flour
  • teaspoons salt
  • 2 cups whole wheat flour

Toppings

  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoons sunflower seeds
  • 1 large egg for egg wash
  • 1 tablespoon water (for egg wash)

Instructions

  1. Combine butter and milk in a microwavable bowl and microwave until melted.
  2. Mix in honey, yeast, oatmeal, all-purpose flour, salt, and whole wheat flour until combined.
  3. Add seeds and continue mixing until a soft dough forms.
  4. Knead the dough on a floured surface for about 8 minutes.
  5. Place the dough in a greased bowl, cover, and let rise in a warm place for 1½ to 2 hours until doubled.
  6. Punch down the dough and flatten it into a rectangle, folding it to seal.
  7. Place the dough in a greased loaf pan and let it rise for another 30 minutes.
  8. Brush with egg wash and add more seeds if desired.
  9. Bake at 350°F (175°C) for 30-40 minutes until golden brown and hollow when tapped.
  10. Cool on a wire rack before slicing.
