Ingredients

  • 2 cups whole wheat flour
  • 1 ¼ cups unbleached all-purpose flour
  • ½ tsp salt
  • 1 packet instant yeast
  • 1 ½ cups warm water
  • ¼ cup millet
  • ¼ cup rolled oats

Instructions

  1. Combine warm water with yeast and let it sit for 5 minutes until foamy.
  2. Add salt and flours to the yeast mixture and stir to form a sticky dough.
  3. Grease the bowl lightly and cover it, letting the dough rise in a warm place for 1 hour or in the refrigerator for 2 hours.
  4. Once doubled, sprinkle flour on the dough, transfer to a floured surface, and knead, incorporating oats and millet.
  5. Place the dough on a greased baking sheet and cover lightly with flour, letting it rest for 45-60 minutes.
  6. Preheat the oven to 450°F (232°C) and place a metal pan on the lowest rack.
  7. Slash the bread with a knife and pour hot water into the pan below.
  8. Bake for 25-35 minutes until golden brown and crusty.
