Ingredients

The dough

  • 8 cups whole wheat flour
  • cup vital wheat gluten
  • 1 ½ tablespoons instant yeast
  • 4 teaspoons salt
  • 2 ¼ cups milk
  • ¾ cup water
  • ½ cup honey
  • ¼ cup oil

The quinoa

  • 1 cup uncooked white quinoa
  • 2 ¼ cups water

Instructions

  1. Combine quinoa and 2 ¼ cups water in a saucepan, bring to a simmer, cover, and cook for 10-12 minutes.
  2. Remove from heat, stir, and let stand for 10-20 minutes.
  3. In a stand mixer, combine whole wheat flour, vital wheat gluten, yeast, and salt.
  4. Add warmed milk, ¾ cup water, honey, and oil, mixing until crumbly.
  5. Gradually add warm quinoa while mixing until a soft dough forms.
  6. Knead the dough for 7-9 minutes.
  7. Place in a greased bowl, cover, and let rise until doubled.
  8. Punch down the dough and divide into three equal portions.
  9. Shape each portion into a loaf and place in greased loaf pans.
  10. Let rise until 1 inch above the rim of the pans.
  11. Preheat oven to 350°F and bake for 30-35 minutes.
  12. Cool on a rack and brush with butter if desired.
