Whole Wheat Quinoa Bread

The quinoa

uncooked white quinoa

Instructions
- Combine quinoa and 2 ¼ cups water in a saucepan, bring to a simmer, cover, and cook for 10-12 minutes.
- Remove from heat, stir, and let stand for 10-20 minutes.
- In a stand mixer, combine whole wheat flour, vital wheat gluten, yeast, and salt.
- Add warmed milk, ¾ cup water, honey, and oil, mixing until crumbly.
- Gradually add warm quinoa while mixing until a soft dough forms.
- Knead the dough for 7-9 minutes.
- Place in a greased bowl, cover, and let rise until doubled.
- Punch down the dough and divide into three equal portions.
- Shape each portion into a loaf and place in greased loaf pans.
- Let rise until 1 inch above the rim of the pans.
- Preheat oven to 350°F and bake for 30-35 minutes.
- Cool on a rack and brush with butter if desired.
