Quinoa Bread

Ingredients

  • cups warm water
  • tablespoons honey or maple syrup
  • teaspoons active dry yeast
  • cups toasted quinoa flour
  • 1 cup tapioca starch
  • 1 cup cornstarch
  • 2 tablespoons dry milk powder or rice milk powder
  • 1 tablespoon xanthan gum
  • teaspoons fine sea salt
  • 2 large eggs or flax eggs
  • 2 tablespoons melted coconut, avocado, or olive oil
  • as desired tablespoons sesame seeds or poppy seeds

Instructions

  1. Grease a 9 x 5 loaf pan.
  2. If using flax eggs, mix ground flax seeds with warm water and set aside.
  3. Combine warm water and honey or maple syrup in a bowl, sprinkle yeast on top, and let it foam for 5 to 10 minutes.
  4. In a large bowl, mix quinoa flour, tapioca starch, cornstarch, milk powder, xanthan gum, and sea salt.
  5. In another bowl, combine the yeast mixture, beaten eggs, and oil, then add to the dry ingredients and beat for 3 minutes.
  6. Transfer the mixture to the prepared pan and smooth the top with a spoon dipped in cold water.
  7. Cover with a damp cloth and let it rise for 1 hour.
  8. Preheat the oven to 350°F and place a small pan with water on the bottom rack.
  9. Bake the loaf for 40 to 45 minutes, then cool in the pan for 5 minutes before transferring to a wire rack.
