Quinoa Bread

Instructions
- Grease a 9 x 5 loaf pan.
- If using flax eggs, mix ground flax seeds with warm water and set aside.
- Combine warm water and honey or maple syrup in a bowl, sprinkle yeast on top, and let it foam for 5 to 10 minutes.
- In a large bowl, mix quinoa flour, tapioca starch, cornstarch, milk powder, xanthan gum, and sea salt.
- In another bowl, combine the yeast mixture, beaten eggs, and oil, then add to the dry ingredients and beat for 3 minutes.
- Transfer the mixture to the prepared pan and smooth the top with a spoon dipped in cold water.
- Cover with a damp cloth and let it rise for 1 hour.
- Preheat the oven to 350°F and place a small pan with water on the bottom rack.
- Bake the loaf for 40 to 45 minutes, then cool in the pan for 5 minutes before transferring to a wire rack.
