Ingredients

Wet Ingredients

  • ¼ cup butter, softened
  • ¼ cup unsweetened applesauce
  • cup sugar (coconut palm sugar or regular)
  • cup maple syrup
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt or sour cream

Dry Ingredients

  • 1 cup gluten-free flour blend
  • ½ cup quinoa flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Add-ins

  • ½ cup walnuts, chopped (optional)
  • 2 medium bananas, mashed

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a 9x5 inch loaf pan with cooking spray.
  2. In a large bowl, combine the butter, applesauce, sugar, and maple syrup until mixed.
  3. Add the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the gluten-free flour blend, quinoa flour, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the Greek yogurt, walnuts, and mashed bananas until evenly distributed.
  7. Pour the batter into the prepared loaf pan and bake for 60 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
