Instructions
- Preheat the oven to 350°F (175°C) and spray a 9x5 inch loaf pan with cooking spray.
- In a large bowl, combine the butter, applesauce, sugar, and maple syrup until mixed.
- Add the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the gluten-free flour blend, quinoa flour, baking soda, and salt.
- Add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the Greek yogurt, walnuts, and mashed bananas until evenly distributed.
- Pour the batter into the prepared loaf pan and bake for 60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
