Ingredients

Wet Ingredients

  • cup grated zucchini
  • 2 large overripe bananas
  • ½ cup melted coconut oil
  • ½ cup pure maple syrup
  • ½ cup buttermilk
  • 2 large eggs
  • 1 tsp pure vanilla extract

Dry Ingredients

  • cups whole wheat flour
  • 1 cup chopped walnuts
  • 2 tbsp corn starch
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp baking powder
  • ½ tsp salt

Optional Garnish

  • 2 tbsp pure maple sugar flakes

Instructions

  1. Preheat the oven to 350°F and grease and flour a 9" x 5" loaf pan.
  2. In a medium bowl, mix the dry ingredients together.
  3. In a larger bowl, combine the wet ingredients and whisk until smooth.
  4. Add the grated zucchini to the wet mixture and stir until incorporated.
  5. Combine the wet and dry ingredients, mixing until just incorporated.
  6. Transfer the batter to the prepared pan and sprinkle with maple sugar flakes if desired.
  7. Bake for 50 to 55 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
