Instructions
- Preheat the oven to 350°F and grease and flour a 9" x 5" loaf pan.
- In a medium bowl, mix the dry ingredients together.
- In a larger bowl, combine the wet ingredients and whisk until smooth.
- Add the grated zucchini to the wet mixture and stir until incorporated.
- Combine the wet and dry ingredients, mixing until just incorporated.
- Transfer the batter to the prepared pan and sprinkle with maple sugar flakes if desired.
- Bake for 50 to 55 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
