Ingredients

  • cup all-purpose or white whole wheat flour
  • cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon allspice (optional)
  • 1 cup mashed bananas (about 2 medium/large bananas)
  • 1 large egg (lightly beaten)
  • cup melted butter or neutral flavored oil
  • ¼ cup sour cream
  • 1 teaspoon vanilla extract
  • cups shredded zucchini (about 10 ounces before squeezing)

Instructions

  1. Preheat the oven to 350°F and lightly grease a loaf pan.
  2. In a large bowl, whisk together the dry ingredients.
  3. Add the wet ingredients and mix until just combined.
  4. Squeeze excess moisture from the shredded zucchini and fold it into the batter.
  5. Spread the batter in the prepared pan and bake for 50-60 minutes until a toothpick comes out clean.
  6. Cool in the pan for 10-15 minutes before transferring to a cooling rack.
