Instructions
- Preheat the oven to 350°F and lightly grease a loaf pan.
- In a large bowl, whisk together the dry ingredients.
- Add the wet ingredients and mix until just combined.
- Squeeze excess moisture from the shredded zucchini and fold it into the batter.
- Spread the batter in the prepared pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10-15 minutes before transferring to a cooling rack.
