Instructions
- Preheat the oven to 325 degrees.
- In a large bowl, mix together the banana, eggs, coconut oil, honey, vanilla, almond milk, and cinnamon.
- Gradually add the flour, mixing in ½ cup at a time.
- Add the baking soda, ground flax seed, and salt, then fold in the shredded zucchini.
- If the zucchini is very moist, squeeze out some moisture with a clean towel.
- Line a 9x5 loaf pan with parchment paper and spray it with coconut oil spray.
- Pour the batter into the pan and sprinkle extra cinnamon on top.
- Bake for 35-40 minutes or until a toothpick comes out clean.
