Healthy Zucchini Banana Bread

Ingredients

  • 1 unit Banana
  • 2 unit eggs
  • 1 cup Zucchini shredded
  • ¼ cup coconut oil
  • cup honey
  • 1 tsp vanilla
  • tsp cinnamon
  • tsp Baking Soda
  • ¼ tsp salt
  • ¼ cup unsweetened vanilla almond milk
  • 2 cups All Purpose Flour
  • 3 tbsp Ground flax seed

Instructions

  1. Preheat the oven to 325 degrees.
  2. In a large bowl, mix together the banana, eggs, coconut oil, honey, vanilla, almond milk, and cinnamon.
  3. Gradually add the flour, mixing in ½ cup at a time.
  4. Add the baking soda, ground flax seed, and salt, then fold in the shredded zucchini.
  5. If the zucchini is very moist, squeeze out some moisture with a clean towel.
  6. Line a 9x5 loaf pan with parchment paper and spray it with coconut oil spray.
  7. Pour the batter into the pan and sprinkle extra cinnamon on top.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
