Instructions
- Preheat the oven to 350°F and grease two 8x4” loaf pans.
- Drain the shredded zucchini on paper towels and set aside.
- In a medium bowl, mix the flours, cinnamon, baking powder, baking soda, and salt.
- In a large bowl, whisk the eggs, sugar, olive oil, almond milk, and vanilla together.
- Squeeze excess moisture from the zucchini and add it to the wet mixture.
- Combine the dry ingredients with the wet mixture and stir until just combined.
- Pour the batter into the prepared pans and sprinkle chocolate chips on top if using.
- Bake for 45 to 50 minutes or until a toothpick comes out clean.
- Let the loaves cool before slicing and enjoying.
