Healthy Zucchini Bread

Ingredients

  • 2 cups packed shredded zucchini
  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 4 large eggs
  • ½ cup cane sugar
  • ½ cup extra-virgin olive oil
  • ½ cup almond milk
  • 2 teaspoons vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease two 8x4” loaf pans.
  2. Drain the shredded zucchini on paper towels and set aside.
  3. In a medium bowl, mix the flours, cinnamon, baking powder, baking soda, and salt.
  4. In a large bowl, whisk the eggs, sugar, olive oil, almond milk, and vanilla together.
  5. Squeeze excess moisture from the zucchini and add it to the wet mixture.
  6. Combine the dry ingredients with the wet mixture and stir until just combined.
  7. Pour the batter into the prepared pans and sprinkle chocolate chips on top if using.
  8. Bake for 45 to 50 minutes or until a toothpick comes out clean.
  9. Let the loaves cool before slicing and enjoying.
