Ingredients

  • cups almond flour
  • ¼ cup coconut flour
  • cup granulated sweetener of choice
  • 1 teaspoon baking powder
  • 3 large eggs
  • ½ cup butter
  • ½ cup Greek yogurt
  • ¼ cup milk of choice
  • 1 teaspoon vanilla extract
  • ½ cup zucchini

Instructions

  1. Preheat the oven to 180C/350F and grease a loaf pan.
  2. In a bowl, mix the dry ingredients together.
  3. In another bowl, whisk the wet ingredients until smooth.
  4. Combine the wet and dry ingredients, then fold in the shredded zucchini.
  5. Transfer the batter to the prepared loaf pan.
  6. Bake for 45-50 minutes or until a skewer comes out clean.
  7. Let the bread cool in the pan before slicing.
