Instructions
- Preheat the oven to 350°F and prepare a loaf pan with parchment paper and nonstick spray.
- In a small bowl, mix together almond flour, salt, baking soda, cinnamon, and nutmeg.
- In a large bowl, whisk eggs with the mashed banana.
- Add almond butter, maple syrup, and vanilla to the egg and banana mixture.
- Combine the dry ingredients with the wet ingredients until mixed.
- Fold in the grated zucchini and chocolate chips.
- Pour the mixture into the prepared loaf pan and bake for 40-45 minutes, covering halfway with aluminum foil.
- Check for doneness by inserting a toothpick into the center; it should come out clean.
- Let the bread cool completely before cutting.
