Paleo Zucchini Bread

Ingredients

  • 2 cups almond flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • tsp cinnamon
  • ¼ tsp nutmeg
  • 2 large eggs
  • 1 medium banana, mashed
  • cup almond butter or cashew butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup grated zucchini, squeezed dry
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper and nonstick spray.
  2. In a small bowl, mix together almond flour, salt, baking soda, cinnamon, and nutmeg.
  3. In a large bowl, whisk eggs with the mashed banana.
  4. Add almond butter, maple syrup, and vanilla to the egg and banana mixture.
  5. Combine the dry ingredients with the wet ingredients until mixed.
  6. Fold in the grated zucchini and chocolate chips.
  7. Pour the mixture into the prepared loaf pan and bake for 40-45 minutes, covering halfway with aluminum foil.
  8. Check for doneness by inserting a toothpick into the center; it should come out clean.
  9. Let the bread cool completely before cutting.
