Ingredients

  • 1.75 cups white whole wheat flour
  • ½ teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup coconut sugar
  • 2 eggs
  • ¼ cup unsweetened almond milk
  • cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1.5 cups shredded zucchini
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9-inch loaf pan with coconut oil, butter, or cooking spray.
  3. Grate the zucchini and set aside.
  4. In a large bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, and coconut sugar.
  5. In a medium bowl, whisk together the eggs, coconut oil, almond milk, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Add the zucchini and walnuts to the batter and mix until evenly distributed.
  8. Pour the batter into the prepared loaf pan and top with extra walnuts if desired.
  9. Bake for 50 minutes or until a toothpick comes out clean.
  10. Cool and enjoy!
