grated zucchini

white whole wheat flour

honey or maple syrup

melted coconut oil or extra-virgin olive oil

eggs

milk of choice or water

teaspoon
baking soda

teaspoon
ground cinnamon

teaspoons
vanilla extract

teaspoon
fine-grain sea salt
¼
teaspoon
ground nutmeg
Optional add-ins
¾
cup
roughly chopped raw walnuts or pecans
Instructions
Preheat the oven to 325°F and grease a 9” x 5” loaf pan.
Toast the nuts on a baking sheet for about 5 minutes until fragrant.
In a large bowl, combine melted coconut oil and honey, then whisk until combined.
Add the eggs and beat well, then mix in the milk, baking soda, cinnamon, vanilla, salt, and nutmeg.
Stir in the grated zucchini and then fold in the flour until just combined.
If using, gently fold in the toasted nuts.
Pour the batter into the greased loaf pan and sprinkle with additional cinnamon.
Bake for 55 to 60 minutes, or until a toothpick comes out clean.
Let the bread cool in the pan on a wire rack before slicing.
