Whole Grain Zucchini Bread

Ingredients

  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • cup coconut sugar
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp fine sea salt
  • ½ cup 2% Greek yogurt
  • cup oil
  • ¼ cup milk
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ½ cups grated zucchini
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Grate zucchini and measure out 1 ½ cups, then set aside.
  3. In a large bowl, whisk together the flours, sugar, baking powder, cinnamon, nutmeg, and salt.
  4. In the bowl with zucchini, mix in yogurt, oil, milk, eggs, and vanilla until combined.
  5. Combine the wet and dry ingredients, stirring just until mixed, and fold in walnuts.
  6. Pour the batter into the loaf pan and bake for about 1 hour, or until a knife comes out clean.
  7. Cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
