Whole Grain Zucchini Bread

Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- Grate zucchini and measure out 1 ½ cups, then set aside.
- In a large bowl, whisk together the flours, sugar, baking powder, cinnamon, nutmeg, and salt.
- In the bowl with zucchini, mix in yogurt, oil, milk, eggs, and vanilla until combined.
- Combine the wet and dry ingredients, stirring just until mixed, and fold in walnuts.
- Pour the batter into the loaf pan and bake for about 1 hour, or until a knife comes out clean.
- Cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
