Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, mix the eggs, maple syrup, Greek yogurt, milk, coconut oil, vanilla, and shredded zucchini until well combined.
- Combine the wet ingredients with the dry ingredients and mix gently to avoid over-mixing.
- Pour the batter into a greased 9x5-inch loaf pan.
- Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
