Ingredients

  • 1 ¾ cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup maple syrup
  • 1 cup plain Greek yogurt
  • cup almond milk
  • 3 tablespoons coconut oil
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups grated zucchini

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix the eggs, maple syrup, Greek yogurt, milk, coconut oil, vanilla, and shredded zucchini until well combined.
  4. Combine the wet ingredients with the dry ingredients and mix gently to avoid over-mixing.
  5. Pour the batter into a greased 9x5-inch loaf pan.
  6. Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
