Ingredients

  • 1 ¾ cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup grated zucchini
  • ½ cup maple syrup
  • ½ cup plain Greek yogurt
  • 1 cup 100% pure pumpkin
  • cup almond milk
  • 3 tablespoons coconut oil
  • 1 ½ teaspoons vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  3. In a separate bowl, combine the eggs, grated zucchini, maple syrup, Greek yogurt, pumpkin puree, milk, melted coconut oil, and vanilla until well mixed.
  4. Add the wet ingredients to the dry ingredients and mix gently until just combined, then fold in the chocolate chips.
  5. Pour the batter into a greased 9x5-inch loaf pan and sprinkle additional chocolate chips on top if desired.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
