Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
- In a separate bowl, combine the eggs, grated zucchini, maple syrup, Greek yogurt, pumpkin puree, milk, melted coconut oil, and vanilla until well mixed.
- Add the wet ingredients to the dry ingredients and mix gently until just combined, then fold in the chocolate chips.
- Pour the batter into a greased 9x5-inch loaf pan and sprinkle additional chocolate chips on top if desired.
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
