Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour or white whole wheat flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon ground ginger
  • teaspoon ground cloves
  • teaspoon salt
  • ½ cup semi-sweet chocolate chips
  • ½ cup light brown sugar or coconut sugar

Wet Ingredients

  • ½ cup maple syrup
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • ½ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ¼ cup melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and prepare a bread pan with nonstick spray.
  2. In a large bowl, mix all dry ingredients except for the brown sugar.
  3. In another bowl, cream together the brown sugar and maple syrup, then add eggs one at a time.
  4. Mix in the almond milk, pumpkin puree, and vanilla extract.
  5. Gradually combine the dry ingredients with the wet mixture, then add the melted coconut oil.
  6. Pour the batter into the prepared bread pan and sprinkle additional chocolate chips on top if desired.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool for 5-10 minutes before removing it from the pan to cool completely.
