Instructions
- Preheat the oven to 350ºF and prepare a bread pan with nonstick spray.
- In a large bowl, mix all dry ingredients except for the brown sugar.
- In another bowl, cream together the brown sugar and maple syrup, then add eggs one at a time.
- Mix in the almond milk, pumpkin puree, and vanilla extract.
- Gradually combine the dry ingredients with the wet mixture, then add the melted coconut oil.
- Pour the batter into the prepared bread pan and sprinkle additional chocolate chips on top if desired.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool for 5-10 minutes before removing it from the pan to cool completely.
