Ingredients

The batter

  • 2 pieces eggs
  • cup coconut oil
  • ½ cup maple syrup
  • 1 cup pumpkin puree
  • 1 tsp vanilla
  • 1 ½ cups white whole wheat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp pumpkin pie spice

Optional mix-ins

  • 1 cup chocolate chips or chopped pecans

Instructions

  1. Preheat the oven to 350°F and prepare a bread loaf pan with non-stick spray and parchment paper.
  2. In a large bowl, whisk together the eggs, coconut oil, and maple syrup.
  3. Add the pumpkin puree and vanilla to the wet mixture and set aside.
  4. In a separate bowl, combine the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  5. Mix the dry ingredients into the wet ingredients until combined.
  6. Fold in any desired mix-ins, reserving some to sprinkle on top.
  7. Pour the batter into the prepared baking dish and place it in the oven.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
