Instructions
- Preheat the oven to 350°F and prepare a bread loaf pan with non-stick spray and parchment paper.
- In a large bowl, whisk together the eggs, coconut oil, and maple syrup.
- Add the pumpkin puree and vanilla to the wet mixture and set aside.
- In a separate bowl, combine the flour, baking soda, baking powder, salt, and pumpkin pie spice.
- Mix the dry ingredients into the wet ingredients until combined.
- Fold in any desired mix-ins, reserving some to sprinkle on top.
- Pour the batter into the prepared baking dish and place it in the oven.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
