Instructions
- 1. Preheat the oven to 350°F and spray a loaf pan with cooking spray.
- 2. In a large bowl, combine whole wheat flour, baking soda, cinnamon, pumpkin pie spice, and salt.
- 3. In a medium bowl, whisk together pumpkin puree, maple syrup, melted coconut oil, vanilla extract, and eggs until smooth.
- 4. Pour the wet mixture over the dry ingredients and stir until combined, then fold in the chocolate chips.
- 5. Pour the batter into the prepared loaf pan and smooth the top.
- 6. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- 7. Let the bread cool in the pan for 10 minutes before removing it.
