  1. 1. Preheat the oven to 350°F and spray a loaf pan with cooking spray.
  2. 2. In a large bowl, combine whole wheat flour, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. 3. In a medium bowl, whisk together pumpkin puree, maple syrup, melted coconut oil, vanilla extract, and eggs until smooth.
