Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • tsp ground cloves
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable or canola oil
  • 2 large eggs
  • 1 cup canned pumpkin
  • cup apple juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9 by 5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves, and chocolate chips.
  3. Make a well in the center of the flour mixture.
  4. In a separate bowl, whisk together the granulated sugar, brown sugar, melted butter, and vegetable oil.
  5. Add the eggs and whisk until blended. Then add the pumpkin, apple juice, and vanilla, whisking until well combined.
  6. Pour the pumpkin mixture into the well of the flour mixture and fold until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
