Ingredients

Dry Ingredients

  • 3 ½ cups all-purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt

Wet Ingredients

  • 1 15-ounce can pumpkin puree
  • 1 cup vegetable, canola, avocado or melted coconut oil
  • 4 large eggs
  • cup water, milk or buttermilk

Optional Ingredients

  • 1 to 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease the loaf pans.
  2. In a large bowl, whisk together the dry ingredients.
  3. In another bowl, whisk together the wet ingredients until combined.
  4. Pour the wet ingredients over the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips if using.
  6. Pour the batter into the prepared pans.
  7. Bake for 55 to 70 minutes until a toothpick comes out clean.
  8. Let the bread cool in the pans for 10-15 minutes before transferring to a wire rack.
