Ingredients

The bread

  • 1 cup whole wheat pastry flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup 100% pure pumpkin puree
  • ½ cup maple syrup
  • ¼ cup cane sugar
  • 2 tablespoons unsweetened applesauce
  • ¼ cup coconut oil, melted and cooled
  • 1 teaspoon vanilla extract

The glaze

  • 3 oz cream cheese
  • 1 tablespoon maple syrup
  • 1 to 2 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, whisk together the flours, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. In a separate bowl, whisk together the eggs, pumpkin puree, maple syrup, cane sugar, applesauce, melted coconut oil, and vanilla until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to over-mix.
  5. Pour the batter into a prepared 9×5-inch loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the glaze, heat the cream cheese in the microwave for about 30 seconds, then mix in the maple syrup, milk, and vanilla until smooth.
  8. Drizzle the glaze over the cooled pumpkin bread, slice, and enjoy.
