Ingredients

  • 2 tablespoons canola oil or melted and cooled coconut oil
  • ½ cup honey
  • 1 large egg
  • cup plain non-fat Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups pumpkin puree
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves or allspice
  • ¼ teaspoon kosher salt
  • 1 ½ cups white whole wheat flour

Instructions

  1. Preheat the oven to 325°F and prepare an 8x4 inch loaf pan.
  2. In a large bowl, whisk together the oil and honey until smooth.
  3. Add the Greek yogurt and egg, and whisk until well blended.
  4. Mix in the pumpkin puree and vanilla extract.
  5. Sprinkle the baking soda, cinnamon, nutmeg, cloves, and salt over the mixture and stir to combine.
  6. Gently fold in the flour until just incorporated.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 30 minutes, then tent with foil and bake for an additional 25 to 35 minutes until a toothpick comes out clean.
  9. Let the bread cool in the pan for 5 minutes, then transfer to a wire rack to cool for at least 30 minutes before slicing.
