Healthy Pumpkin Bread

Instructions
- Preheat the oven to 325°F and prepare an 8x4 inch loaf pan.
- In a large bowl, whisk together the oil and honey until smooth.
- Add the Greek yogurt and egg, and whisk until well blended.
- Mix in the pumpkin puree and vanilla extract.
- Sprinkle the baking soda, cinnamon, nutmeg, cloves, and salt over the mixture and stir to combine.
- Gently fold in the flour until just incorporated.
- Pour the batter into the prepared loaf pan.
- Bake for 30 minutes, then tent with foil and bake for an additional 25 to 35 minutes until a toothpick comes out clean.
- Let the bread cool in the pan for 5 minutes, then transfer to a wire rack to cool for at least 30 minutes before slicing.
