Ingredients

  • 2 small zucchini, shredded and unpeeled
  • 2 medium ripe bananas, mashed
  • cup honey or pure maple syrup
  • ¼ cup coconut sugar or light/dark brown sugar
  • ¼ cup coconut oil, melted and cooled
  • 1 ½ teaspoons pure vanilla extract
  • 2 large eggs, at room temperature
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 2 cups white whole wheat flour
  • cup chopped toasted nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. Squeeze excess water from the shredded zucchini.
  3. In a bowl, beat together the mashed banana, honey, coconut sugar, coconut oil, and vanilla until smooth.
  4. Add the eggs and mix until combined.
  5. Mix in the spices, baking soda, baking powder, and salt.
  6. Sprinkle the flour over the batter and mix on low speed until just combined.
  7. Fold in the zucchini and any optional mix-ins.
  8. Transfer the batter to the prepared loaf pan and smooth the top.
  9. Bake for 50 to 60 minutes, checking for doneness with a toothpick.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
