Instructions
- Preheat the oven to 350°F and prepare a loaf pan.
- Squeeze excess water from the shredded zucchini.
- In a bowl, beat together the mashed banana, honey, coconut sugar, coconut oil, and vanilla until smooth.
- Add the eggs and mix until combined.
- Mix in the spices, baking soda, baking powder, and salt.
- Sprinkle the flour over the batter and mix on low speed until just combined.
- Fold in the zucchini and any optional mix-ins.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, checking for doneness with a toothpick.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
