Ingredients

The base

  • ¾ cup gluten free self raising flour or whole wheat flour or plain flour
  • 2 teaspoons baking powder
  • a pinch salt
  • a pinch baking soda
  • 1 cup cooked quinoa (about ¼ cup dry quinoa)
  • 1 cup mashed banana (about 2 medium bananas)
  • ½ cup egg whites or 2 eggs or ½ cup applesauce (for vegan version)
  • cup milk of your choice
  • 2 teaspoons vanilla

Optional sweeteners and mix-ins

  • 2 tablespoons honey or maple syrup or sugar
  • to taste added spices/mix ins

Instructions

  1. Cook the quinoa if not already done.
  2. Preheat the oven to 180°C (355°F) and prepare ramekins or a small cake tin.
  3. Combine the chosen flour(s), baking powder, salt, baking soda, quinoa, and any additional ingredients in a bowl.
  4. In another bowl, mix the banana, egg whites, milk, and vanilla until combined.
  5. Combine the wet and dry ingredients, stirring until just mixed.
  6. Pour the mixture into prepared ramekins and bake for 30-45 minutes until golden and cooked through.
