Instructions
- Preheat the oven to 350°F and grease a 9x13 baking dish.
- Soak the quinoa in water for at least 5 minutes, then rinse thoroughly.
- Combine the quinoa with 2 ¾ cups of water and ½ teaspoon salt in a pot, bring to a boil, cover, and reduce heat.
- Cook for 10 minutes, then remove from heat and let it sit to cool.
- In a large bowl, mix together the nuts, dried fruit, remaining salt, cinnamon, chia seeds, and flax seeds.
- In a separate bowl, whisk together the eggs, milk, brown sugar, and vanilla.
- Add the liquid mixture to the nut and fruit mixture and stir well.
- Add the cooled quinoa to the mixture and stir until combined.
- Pour the mixture into the prepared baking dish and sprinkle with chopped apples.
- Cover and bake for 30 minutes, then uncover and bake for an additional 30 minutes.
- Remove from the oven, let cool, and serve.
