Baked Breakfast Quinoa

Ingredients

The base

  • 2 cup White Quinoa
  • ½ teaspoon Salt
  • 2 ¾ cup Water

The mix-ins

  • 2 tablespoon Ground Flax Seed
  • 1 tablespoon Chia Seeds
  • cup Ground Pecans
  • cup Brown Sugar
  • 1 tablespoon Cinnamon
  • ¾ cup Dried Fruit (Golden Raisins & Dried Cherries)
  • 3 large Eggs
  • 3 ½ cup 2% Milk
  • 1 teaspoon Vanilla
  • 1 medium Apple (cored, peeled and chopped)

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 baking dish.
  2. Soak the quinoa in water for at least 5 minutes, then rinse thoroughly.
  3. Combine the quinoa with 2 ¾ cups of water and ½ teaspoon salt in a pot, bring to a boil, cover, and reduce heat.
  4. Cook for 10 minutes, then remove from heat and let it sit to cool.
  5. In a large bowl, mix together the nuts, dried fruit, remaining salt, cinnamon, chia seeds, and flax seeds.
  6. In a separate bowl, whisk together the eggs, milk, brown sugar, and vanilla.
  7. Add the liquid mixture to the nut and fruit mixture and stir well.
  8. Add the cooled quinoa to the mixture and stir until combined.
  9. Pour the mixture into the prepared baking dish and sprinkle with chopped apples.
  10. Cover and bake for 30 minutes, then uncover and bake for an additional 30 minutes.
  11. Remove from the oven, let cool, and serve.
