Instructions
- Preheat the oven to 375°F and prepare the baking pan with olive oil spray.
- Combine the oats, quinoa, half of the walnuts, maple syrup (if using), baking powder, cinnamon, and salt in a bowl.
- In another bowl, beat the egg and mix in the milk, vanilla, and remaining melted butter.
- Layer banana slices at the bottom of the pan, followed by ⅔ of the berries, and then the oat mixture.
- Pour the wet ingredients over the dry mixture, ensuring everything is covered.
- Top with the remaining berries and walnuts.
- Bake for 40 minutes, then drizzle with remaining melted butter and additional maple syrup if desired.
