Ingredients

The base

  • 1 cup rolled oats
  • 1 cup quinoa soaked and rinsed
  • 2 cups low fat milk
  • 1 large egg
  • 3 tablespoons unsalted butter melted
  • 2 teaspoons vanilla
  • 2 bananas cut into pieces
  • 1 ½ cups mixed berries

The flavorings

  • ½ cup toasted walnuts
  • cup maple syrup
  • 1 teaspoon baking powder
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon sea salt

Instructions

  1. Preheat the oven to 375°F and prepare the baking pan with olive oil spray.
  2. Combine the oats, quinoa, half of the walnuts, maple syrup (if using), baking powder, cinnamon, and salt in a bowl.
  3. In another bowl, beat the egg and mix in the milk, vanilla, and remaining melted butter.
  4. Layer banana slices at the bottom of the pan, followed by ⅔ of the berries, and then the oat mixture.
  5. Pour the wet ingredients over the dry mixture, ensuring everything is covered.
  6. Top with the remaining berries and walnuts.
  7. Bake for 40 minutes, then drizzle with remaining melted butter and additional maple syrup if desired.
