Ingredients

The base

  • 2 large ripe bananas
  • cup diced and peeled ripe pears
  • 1 cup uncooked quick oats

The sweeteners and liquids

  • 5 tablespoons pure maple syrup
  • 1 cup fat-free milk or dairy-free milk

The mix-ins

  • 5 tablespoons chopped walnuts
  • 1 large egg
  • 1 teaspoon vanilla extract

The spices and leavening

  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • a pinch salt

Instructions

  1. Preheat the oven to 375°F and lightly spray a baking dish.
  2. Arrange banana slices in a single layer at the bottom of the dish and top with pears, cinnamon, and some maple syrup, then cover with foil and bake for 20 minutes.
  3. In a bowl, mix oats, half of the walnuts, baking powder, cinnamon, and salt.
  4. In another bowl, whisk together the remaining maple syrup, milk, egg, and vanilla extract.
  5. Remove the fruit from the oven and pour the oat mixture over it.
  6. Pour the milk mixture over the oats, ensuring even distribution, then sprinkle remaining cinnamon and walnuts on top.
  7. Bake for about 35 minutes until golden brown and set, then serve warm.
