Instructions
- Preheat the oven to 350°F and oil a baking dish.
- In a bowl, mix together the oats, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk the eggs and then add the milk, coconut sugar, vanilla, and ginger, stirring until combined.
- Combine the dry ingredients with the wet mixture, then fold in the cranberries, pears, and coconut oil.
- Pour the mixture into the prepared baking dish and top with walnuts mixed with maple syrup.
- Bake for 40-45 minutes until slightly puffed.
- Let cool for about 10 minutes before serving.
