Pear Walnut Baked Oatmeal

Ingredients

The base

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 2 large eggs or flax eggs
  • 2 cups milk
  • ½ cup coconut sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons fresh ginger, grated
  • ½ cup dried cranberries
  • 2 medium pears, cut into bite-sized pieces
  • 1 tablespoon melted coconut oil or butter

The toppings

  • ½ cup walnuts, coarsely chopped
  • 1 teaspoon maple syrup (optional)

Instructions

  1. Preheat the oven to 350°F and oil a baking dish.
  2. In a bowl, mix together the oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the eggs and then add the milk, coconut sugar, vanilla, and ginger, stirring until combined.
  4. Combine the dry ingredients with the wet mixture, then fold in the cranberries, pears, and coconut oil.
  5. Pour the mixture into the prepared baking dish and top with walnuts mixed with maple syrup.
  6. Bake for 40-45 minutes until slightly puffed.
  7. Let cool for about 10 minutes before serving.
