Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8x8-inch baking dish.
- In a bowl, mix together the oats, cinnamon, baking powder, and salt.
- In another bowl, whisk the almond milk, coconut oil, maple syrup, eggs, and vanilla extract.
- Combine the wet and dry ingredients, then fold in the diced pears.
- Transfer the mixture to the prepared baking dish and top with additional pear slices.
- Sprinkle pecans on top and bake for 40-45 minutes until golden and set.
- Let cool for 5-10 minutes before serving, optionally adding maple syrup or yogurt.
