Ingredients

The base

  • 2 cups gluten-free rolled oats
  • 1 tsp baking powder
  • 1 Tbsp ground cinnamon
  • ¼ tsp salt

The wet ingredients

  • cups almond milk or non-dairy milk of choice
  • ¼ cup liquid coconut oil
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 Tbsp pure vanilla extract

The fruit and nuts

  • 2 cups pears, diced
  • ¾ cup pecans, chopped or whole

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8x8-inch baking dish.
  2. In a bowl, mix together the oats, cinnamon, baking powder, and salt.
  3. In another bowl, whisk the almond milk, coconut oil, maple syrup, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients, then fold in the diced pears.
  5. Transfer the mixture to the prepared baking dish and top with additional pear slices.
  6. Sprinkle pecans on top and bake for 40-45 minutes until golden and set.
  7. Let cool for 5-10 minutes before serving, optionally adding maple syrup or yogurt.
