Ingredients

The base

  • 2 ¾ cups old-fashioned rolled oats
  • 1 ¼ teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • 3 tablespoons pure maple syrup
  • 2 tablespoons molasses
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • 1 ¼ cups dairy or non-dairy milk
  • ¼ cup melted butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 cup finely diced pear

The toppings

  • cup chopped pecans

Optional for serving

  • as desired plain or vanilla yogurt
  • as desired maple syrup
  • as desired toasted pecans
  • as desired ground cinnamon

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish with cooking spray.
  2. In a bowl, mix oats, spices, baking powder, salt, maple syrup, molasses, applesauce, eggs, milk, melted butter, and vanilla until combined.
  3. Fold in diced pear and ¼ cup of toasted pecans.
  4. Transfer the mixture to the baking dish, top with pear slices and remaining pecans, and bake for 30-35 minutes until set.
  5. Let it cool for 10 minutes before serving, then top with yogurt, maple syrup, pecans, and cinnamon as desired.
