Ingredients

The oatmeal

  • 2 cups gluten-free rolled oats
  • ¾ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¾ teaspoon ground ginger
  • ½ teaspoon nutmeg
  • ½ teaspoon sea salt
  • 2 cups almond milk
  • 1 banana mashed
  • 3 tablespoons maple syrup
  • 1 tablespoon molasses
  • 1 large egg or flax egg
  • 1 teaspoon vanilla extract
  • 1 cup apple, diced into small pieces
  • ¼ cup chocolate chips (optional)

The chocolate drizzle

  • ¼ cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Preheat the oven to 375°F.
  2. Grease an 8x8 inch baking dish.
  3. In a medium bowl, mix together the oats, baking powder, cinnamon, ginger, nutmeg, and salt.
  4. In another bowl, whisk together the almond milk, mashed banana, maple syrup, molasses, egg, and vanilla.
  5. Combine the wet and dry ingredients, stirring well.
  6. Fold in the diced apple and chocolate chips.
  7. Transfer the mixture to the prepared baking dish and add apple slices on top.
  8. Bake for 30 minutes until the top is golden and the center is set.
  9. Let cool for a few minutes before slicing and enjoying.
