Ingredients

  • 2 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • ½ cup unsweetened applesauce
  • 1 cup milk of choice
  • cup maple syrup
  • 2 large eggs
  • 2 tablespoons melted coconut oil (or butter)
  • 1 teaspoon vanilla extract
  • 1 medium apple, diced
  • ¼ cup raisins (optional)

Instructions

  1. Preheat the oven to 375ºF and grease an 8-inch square baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. Add the wet ingredients: applesauce, milk, maple syrup, eggs, coconut oil, and vanilla extract, and mix well.
  4. Fold in the chopped apple and raisins if using.
  5. Pour the mixture into the prepared pan and spread it evenly.
  6. Bake for 40 minutes until the edges are golden and the center is firm.
  7. Let it cool for at least 15 minutes before slicing into squares.
  8. Serve warm with toppings as desired.
