Instructions
- Preheat the oven to 325°F and grease a baking dish.
- In a medium bowl, whisk together the oats, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, whisk the eggs, then mix in the milk, melted coconut oil, maple syrup, and vanilla.
- Combine the oat mixture with the milk mixture, then add the diced apples, walnuts, and about ⅔ of the cranberries, stirring well.
- Pour the mixture into the prepared baking dish and sprinkle the remaining cranberries on top.
- Bake for about 45 minutes until set, then serve warm.
