Baked Oatmeal with Apples and Cinnamon

Ingredients

The base

  • 2 ⅓ cups rolled oats (Old Fashioned)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg

The wet ingredients

  • 2 large eggs
  • 2 cups milk
  • ¼ cup coconut oil, melted
  • 6 Tbsp real maple syrup
  • ½ tsp vanilla extract

The mix-ins

  • 2 crisp peeled and cored sweet apples (diced)
  • ¾ cup chopped walnuts
  • ½ cup dried cranberries

Instructions

  1. Preheat the oven to 325°F and grease a baking dish.
  2. In a medium bowl, whisk together the oats, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, whisk the eggs, then mix in the milk, melted coconut oil, maple syrup, and vanilla.
  4. Combine the oat mixture with the milk mixture, then add the diced apples, walnuts, and about ⅔ of the cranberries, stirring well.
  5. Pour the mixture into the prepared baking dish and sprinkle the remaining cranberries on top.
  6. Bake for about 45 minutes until set, then serve warm.
