Ingredients

  • cups old fashioned rolled oats
  • 1 tablespoon chia seeds (optional)
  • teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • ¼ cup maple syrup or honey
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • cups milk of choice
  • ¼ cup melted unsalted butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 cup shredded apple or finely diced
  • cup chopped walnuts, toasted

Instructions

  1. Preheat the oven to 375℉ and spray a baking dish with cooking spray.
  2. In a bowl, combine oats, chia seeds, cinnamon, baking powder, salt, maple syrup, applesauce, eggs, milk, butter, and vanilla. Stir until mixed.
  3. Fold in the apples and toasted walnuts.
  4. Transfer the mixture to the baking dish and top with additional walnuts.
  5. Bake for 30-35 minutes until the center is set.
  6. Let it sit for 10 minutes before serving.
