Ingredients

Dry ingredients

  • cups rolled oats
  • ½ cup chopped walnuts
  • ½ cup raisins
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp ground nutmeg
  • 2 large sweet apples, peeled, cored and finely diced

Wet ingredients

  • 1 cup whole milk
  • 1 cup buttermilk
  • 2 large eggs
  • ¼ cup unpasteurized honey or pure maple syrup
  • 1 tsp pure vanilla extract

Optional Garnish

  • to taste plain Greek yogurt
  • to taste apple slices
  • to taste chopped walnuts
  • to taste raisins
  • to taste mint leaves

Instructions

  1. Preheat the oven to 350°F and grease an 8" square baking dish.
  2. In a large mixing bowl, combine the rolled oats, walnuts, raisins, baking powder, cinnamon, salt, and nutmeg.
  3. Mix well and then add the diced apple, mixing until well distributed.
  4. In a separate bowl, combine the milk, buttermilk, honey or maple syrup, eggs, and vanilla extract. Whisk until well combined.
  5. Pour the wet mixture over the dry ingredients and stir well.
  6. Transfer the mixture to the prepared baking dish.
  7. Bake for 30-35 minutes until the top is browned and the center is set.
  8. Let cool slightly before serving, or chill completely to cut into bars.
