Ingredients

The oatmeal

  • cups rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • a pinch nutmeg
  • ½ teaspoon salt
  • 2 large eggs
  • 2 cups almond milk
  • ¼ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups shredded apple
  • cup raisins
  • 3 tablespoons chopped pecans

The glaze

  • 3 ounces cream cheese
  • 1 tablespoon maple syrup
  • 1 tablespoon almond milk
  • a dash cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, applesauce, maple syrup, vanilla extract, and shredded apple until well combined.
  4. Combine the wet ingredients with the dry ingredients and fold in the raisins.
  5. Transfer the mixture to a prepared baking dish and sprinkle the top with chopped pecans.
  6. Bake for 45 to 50 minutes until set and a toothpick comes out clean.
  7. While baking, prepare the maple cream cheese glaze by microwaving the cream cheese until softened, then whisk in maple syrup, almond milk, and cinnamon until smooth.
  8. Let the baked oatmeal cool for 5 minutes before serving, then drizzle with the glaze.
