Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together the rolled oats, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the eggs, almond milk, applesauce, maple syrup, vanilla extract, and shredded apple until well combined.
- Combine the wet ingredients with the dry ingredients and fold in the raisins.
- Transfer the mixture to a prepared baking dish and sprinkle the top with chopped pecans.
- Bake for 45 to 50 minutes until set and a toothpick comes out clean.
- While baking, prepare the maple cream cheese glaze by microwaving the cream cheese until softened, then whisk in maple syrup, almond milk, and cinnamon until smooth.
- Let the baked oatmeal cool for 5 minutes before serving, then drizzle with the glaze.
